Organically Grown on Natural Logs
In 2008, we inoculated our first shiitake mushroom logs, using red oak cut out of our sugarbush.
This initial small batch fruited the following summer, and after an extremely positive
response from customers, we decided to increase the amount we produce. Greater numbers of
logs have been inoculated in each subsequent year, and we have been experimenting with encouraging
the logs to fruit even in the winter months.
Our certified organic shiitake is available fresh when the logs are fruiting, and dry shiitake may be available at other times.
